Middle Meals for Houseguests

Moms always make things look easy, and so it wasn't until I was entertaining guests of my own that I realized how much work goes into feeding people for full days on end.

Over the Easter weekend, we had the whole crew, including myself and my sister, Beth's husband, dear old Dad, a family friend and, of course, a very hungry Hazel on board. And trust - we ain't no dainty eaters.

Mom pulled out a few meals between gourmet dinners that are easy (all things are relative) and way more delicious than my usual 4-cups-of-coffee breakfast.


For Easter Saturday breakfast, Mom threw together Belgium waffles with sugared strawberries, whipped cream and microwave sausages. This was the first of... well, a couple helpings. 


We do afternoon iced tea, but you can keep your crumpets. Mom's Easter sugar cookies and lemon bars will work just fine.


Warm welcomes are fine, but some are best served chilled in a Kaelan-sized goblet. Served alongside the ultimate comfort food - Betty Crocker chicken pot pies, it simultaneously proves that home is where the heart is, and the way there is through the stomach.


And, ok, fine. Sometimes we snack.
